BANANA ZUCCHINI MUFFINS

I don’t know about you, but I love zucchini! Now, I couldn’t say the same as a child, but it’s great to see how you can progress from hating a certain type of food to absolutely loving it. I see this a lot with the young students that I work with for my cooking workshops.

 

Maybe you’re not a fan of zucchini, but I promise you would never know that there was zucchini in the recipe that I’m about to share below.

 

Ingredients

  • ½ cup sugar

  • 4 tbsp. butter

  • 2 eggs

  • 1 ½ cups flour

  • ¼ tsp. salt

  • 1 tsp. baking soda

  • 1 1/3 cups ripe bananas, mashed

  • ½ cup zucchini

  • Optional: Nuts

 

Directions

  1. Pre-heat your oven to 350°F

  2. Add all of the ingredients into a large bowl, and fold in with a spatula until everything is incorporated

  3. Add muffin liners to your muffin pan, or spray the pan with your choice of oil

  4. Add the mixture into muffin pan

  5. Cook for a total of 30 minutes, rotating the pan halfway through

  6. Take the muffins out of the oven and add to a cooling rack

  7. Top with sliced banana and grated zucchini
