
I don’t know about you, but I love zucchini! Now, I couldn’t say the same as a child, but it’s great to see how you can progress from hating a certain type of food to absolutely loving it. I see this a lot with the young students that I work with for my cooking workshops.
Maybe you’re not a fan of zucchini, but I promise you would never know that there was zucchini in the recipe that I’m about to share below.
Ingredients
½ cup sugar
4 tbsp. butter
2 eggs
1 ½ cups flour
¼ tsp. salt
1 tsp. baking soda
1 1/3 cups ripe bananas, mashed
½ cup zucchini
Optional: Nuts
Directions
Pre-heat your oven to 350°F
Add all of the ingredients into a large bowl, and fold in with a spatula until everything is incorporated
Add muffin liners to your muffin pan, or spray the pan with your choice of oil
Add the mixture into muffin pan
Cook for a total of 30 minutes, rotating the pan halfway through
Take the muffins out of the oven and add to a cooling rack
Top with sliced banana and grated zucchini
